1. Chili Carne Nachos

Are you looking for a great snack to liven up a party or family get together? These nachos are a perfect happy medium of abundance and spice! These nachos pack a punch unlike any other that leave you with a slow roasted spice that keeps you coming back for more. 

Ingredients

  • 1 dash oil
  • 1 pound lean beef, minced
  • 1 onion, chopped
  • 1 package of chili con carne base
  • 1 can tomatoes
  • 1 can four bean mix, rinsed and drained
  • 2 tbsp tomato paste
  • 2 tomatoes, chopped
  • ½ red onion, chopped
  • ¼ coriander, chopped
  • 1 package corn chips
  • 1 cup cheese of your choice, grated
  • ⅓ cup sour cream

Directions

Preheat your oven to 392F. Take a large pan and heat up your oil over medium high heat. Add in your beef and onions and reduce for 5 minutes. Remove from heat and set to the side. In a medium mixing bowl, add your canned tomatoes, onion and coriander. Take a large baking dish and add your corn chips with your beef over the top. Add your cheese. Bake for 10 minutes or until the cheese is thoroughly melted. Top with your fresh tomatoes and sour cream. Serve and enjoy. 

This recipe is perfect for a quick snack or a spicy dinner.

2. Thai Chili Chicken

If you’re looking for something that is sweet, spicy and zesty, this recipe is perfect for you. And while this chicken is guaranteed to have a kick, it’s sweet spice will have you coming back for more. 

Ingredients

  • 2 tbsp peanut oil
  • 1 onion, chopped
  • 1 pound chicken, minced
  • 1 red capiscum, chopped
  • 1 garlic clove, peeled and minced
  • ½ cups green beans, trimmed and cut lengthwise
  • 1 tbsp Thai chili jam
  • 2 tbsp lime juice
  • 1 ½ tbsp soy sauce
  • 2 tbsp fish sauce
  • ⅓ cup Thai basil leaves
  • 4 cups jasmine rice
  • 1 long red chili, sliced
  • 1 knob ginger, peeled and minced

Directions

Begin by heating a wok or a large frying pan over medium high heat. Add in your oil and coat the surface of your wok or frying pan. Add in your onion and stir fry for 1 minute. Next, add in your minced chicken, breaking up with a spatula and cook for 4 to 5 minutes until browned. Add in your capiscum, garlic, ginger. Cook for 2 minutes before adding your chili jam, soy sauce, fish sauce and lime juice. Cook for an additional 2 minutes until the veggies are tender. Add in your Thai basil and chili. Serve and enjoy.

3. Spicy Chicken Tacos and Cilantro Lime Coleslaw

If you want something to add that special spice back in your life, but you aren’t really in the mood for Asian style flavors? No worries! These smoky and spicy chicken tacos pack the special Mexican heat in every bite. Try this recipe out for your next family get together. 

Ingredients

Cumin Lime Chicken

  • 1 pound chicken thighs, boneless and skinless
  • ⅓ cup lime juice
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch cayenne
  • 2 pinches cumin
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced

Cilantro Lime Slaw

  • 4 cups of cabbage of your choice, shredded
  • ¼ cup sour cream
  • ¼ cup mayo
  • 1 clove garlic, minced
  • 1 pinch pepper
  • 1 pinch salt
  • ⅓ cup cilantro, chopped
  • 3 tbsp lime juice

For serving

  • 1 package of corn tortillas, warmed
  • Feta cheese( note you can use any cheese for this as long as it’s crumbly)
  • 1 dash hot sauce
  • Avocado slices
  • Cilantro

Directions

Start by adding your lime juice to a Ziplock bag, along with your olive oil, garlic and seasonings. Add your chicken and seal the bag, lightly squishing around to make sure all the surfaces of the chicken are thoroughly coated. Put in the fridge and marinate for at least 30 minutes. Note, the longer you let it sit, the more flavorful it is! Preheat your oven to 400F. And coat a baking dish with your olive oil. Add your marinated chicken in a single layer and sprinkle the rest of the marinade on top. Season with your salt and pepper. Bake for 30 to 40 minutes. Be sure to baste it halfway through baking. Remove your chicken from the heat and plate with your tortillas, feta cheese, hot sauce, avocado slices and cilantro. For your coleslaw add all your ingredients together and lightly toss. Serve and enjoy.

4. Pumpkin Lentil Curry

This recipe is great for bringing the sweet heat back into your meal regiment. This is a great way to share the joy of spice with those vegetarians in your life. And the best part? It’s healthy! Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 pinches red curry paste
  • 2 cups vegetable broth
  • 1 can coconut milk
  • 1 cup pureed pumpkin
  • 2 tbsp tomato paste
  • 1 cup red lentils
  • 1 pinch salt
  • 1 pinch pepper
  • 2 cups baby spinach
  • ¼ cup toasted cashews
  • 1 sprig cilantro, chopped

Directions

In a deep skillet, heat your oil over medium high heat. Add in your onion and let cook for 2 minutes or until golden brown. Add in your garlic and curry paste and let cook for 1 minute. Make sure the paste is thoroughly incorporated before moving on to the next step! Next, stir in your broth, pumpkin, coconut milk, tomato paste and lentils. Cook for 15 minutes until the lentils are soft. Season with your salt and pepper to taste. During the last 3 to 5 minutes of cooking add your spinach and let it wilt into your curry. Serve over rice or your favorite base. Add your roasted cashews and cilantro. Serve and enjoy.

5. Spicy Chorizo Pasta

This family favorite is perfect for rustic warm meals when you’re craving a sense of spice and comfort for dinner. This recipe is the perfect combination of nose running perfection and warmth. This perfection is unmatched. If you’re in the mood to be wowed, try this recipe out. 

Ingredients

  • 1 pound of chicken tenders, cut into bite sized pieces
  • 1 tbsp olive oil
  • 1 pinch salt
  • 1 pinch paprika
  • 1 small pinch garlic powder
  • 1 small pinch pepper
  • 1 small pinch onion powder
  • 1 small pinch oregano
  • 1 package Mexican chorizo
  • 3 garlic cloves, minced
  • 1 small onion, diced
  • 1 cup chicken broth
  • 1 pound shellbow pasta
  • ½ cup parmesan, grated
  • 1 tbsp lemon juice
  • 1 cup pasta water

Directions

Begin by bringing a large pot of water to a rolling boil over medium high heat. Season your water with a generous amount of salt. Add your chicken to a large bowl. Drizzle with your olive oil and sprinkle with salt, paprika, garlic, powder, onion powder, oregano and black pepper. Make sure that your chicken is thoroughly coated on all sides. Heat a large skillet on medium high heat. Add in your chorizo and spread it out to the bottom of the pan. Use a spatula to break up the meat and let cook for 8 to 10 minutes. Once it is fully cooked, drain the fat and add in your chicken. Let your chicken brown before flipping it over. Do this until thoroughly cooked through. Set to the side. Turn the heat down to medium and add your olive oil into the pan. Saute your onion until soft, about 3 to 4 minutes. Add in your garlic at the last minute of cooking your onion. Add in some water and let it simmer for 1 to 2 minutes. Bring to a boil and reduce to a simmer. Add in your stock, cream and salt. Let simmer for 5 to 6 minutes. Cook the pasta according to the directions on the package. Combine your pasta with your chorizo mixture. Garnish with cheese. Serve and enjoy.
