5 Recipes For Your Next Tea Party

Spring is right around the corner. And with a full winter being spent indoors, we are all dying to get out and spend some quality time with the people we care about. Yet with hanging out comes requirements for snacks. Having a springtime tea party is a guaranteed good time that you and your guests will enjoy. Don’t know where to start with your tea time menu? No problem, here are 5 recipes for your next tea party.

1. Cucumber Avocado Tea Sandwiches with Dill and Mint

It wouldn’t be a tea party without tiny sandwiches to match. Feel fancy with this recipe. And while the ingredients may seem a little bizarre at first glance, this recipe will have your guests coming back for more. 

Ingredients

  • 12 slices of white bread of your choice
  • 1 cucumber, thinly sliced

Spread

  • 2 avocados, be sure they are ripe and kept cold in the fridge
  • 2 squeezes of lemon juice
  • 1 pinch salt
  • ½ cup cucumber, chopped
  • 2 tbsp mint, chopped
  • 2 tbsp dill, chopped

Directions

Begin by preparing your spread and adding all the ingredients together. Puree in a blender until smooth. Let the mixture sit for 10 minutes and settle before pepping them for your sandwich. Cut the crusts off your bread and cut into small triangles. Serve and enjoy. 

This recipe is perfect for some bite sized freshness in every bite.

2. Mixed Fruit Pastries

This recipe is a great way to add some color pop to your tea time. These little pastries don’t feel over filling and have a bright and fresh aftertaste, perfect for spring. This bright fresh pastry has the perfect balance of sweet and tart in every bite. 

Ingredients

Crust

  • 1 egg
  • ½ cup sugar
  • 3 tbsp mayo
  • ½ cup butter, room temp
  • 3 tbsp cornstarch
  • ½ tsp baking soda
  • ¼ tsp lemon juice
  • 2 cups flour

Vanilla Custard

  • 2 cup milk
  • 6 eggs yolks
  • ½ cup sugar
  • 2 tsp vanilla extract

Berries And Glaze

  • ½ cup jam of your choice
  • 1 cup blueberries
  • 1 cup strawberries, sliced
  • ½ cup raspberries
  • 2 splashes of water

Directions

Combine all ingredients for each portion of the recipe. Refrigerate the dough for at least 1 hour before baking. Next,take your chilled dough and tart tin and mold the dough with your fingers until it forms a cup around the . Place your tarts on a baking sheet and bake for 13 minutes at 350F. Next, scoop your custard into the tart shells. Arrange your berries in the custard tart cup. Brush with your glaze. Serve and enjoy.

3. Lemon Drop Cookies

If you’re looking for something that is sweet, tart and utterly adorable, these lemon cookie drops are perfect for you. These bite-sized beauties are almost too cute to eat with their soft glaze and drop-like shape. These cookies are a guaranteed hit for your next tea party. 

Ingredients

  • 1 cup brown rice flour
  • ¾ cup oat flour
  • ¼ cup corn starch
  • ½ cup tapioca starch
  • 2 tsp baking powder
  • 1 pinch salt
  • 1 cup sugar
  • ½ cup butter
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp lemon zest, 1 large lemon worth
  • 1 tbsp lemon juice

Directions

Preheat your oven to 350F. Whisk your flours, cornstarch and baking powder together and set to the side. Next, add your butter, sugar and whisk until smooth. Add your egg and lemon juice. Roll into balls and place gently on parchment paper. Bake cookies for 10 minutes and then remove from heat. Add your lemon juiced and powdered sugar, stirring into a glaze. Dip your cooled cookies into the glaze and let the glaze set. Serve and enjoy.

4. Egg Salad Sandwiches

Are you looking for a little more protein in your tea time sandwiches? Say no more! This egg salad sandwich recipe is both elegant and easy. This personal favorite has the soft sweet sense of egg followed by the bite of red onion and dijon mustard. When you’re looking for something with layers of flavor, try this egg salad sandwich. 

Ingredients

  • 6 eggs hard boiled, peeled and mashed
  • 6 tbsp celery, finely chopped
  • 4 dallops dijon mustard
  • 4 tbsp lime juice
  • ⅓ cup mayo
  • 1 loaf of bread or sliced bread, crusts removed
  • 6 tsp red onion, finely chopped

Directions

Combine your hard boiled eggs, celery, dijon mustard, red onion, mayo and lime juice into a mixing bowl. Mix well. Remove the crusts from your bread and spread your egg mixture across your sandwich. Cut into small triangles for tea time style, serve and enjoy.

5. Fudge Brown Bites

This recipe is a super star for adding that sense of sweet richness to your next tea party. These brownie bites are full of soft chocolate that melts in your mouth. The powdered sugar gives it that tea time aesthetic right out of Alice And Wonderland. Try these fudge brownies the next time you want to satisfy your sweet tooth craving for your next tea party. 

Ingredients

  • 1 cup of semi sweet chocolate chips
  • ¾ cup sugar
  • ⅓ cup coconut oil, refined
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder
  • ⅓ cup all purpose flour
  • 1 tsp cornstarch
  • 1 pinch salt
  • ½ cup chocolate chips

Directions

Begin  by preheating your oven to 350F. Spray down a mini muffin sheet with oil and set to the side. Next, add your chocolate chips and oil to a small saucepan on low until fully melted. Note, a microwave can work for this step as well. Beat your eggs and sugar together until smooth before adding your vanilla extract. Add in your melted chocolate and fold in your cornstarch, flour, cocoa powder and chocolate chips. Scoop your dough into the muffin tin and bake for 15 to 20 minutes. Let cool, serve and enjoy.
