Ingredients 

  • 4 medium russet potatoes 
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 dollop sour cream
  • 1 cup bacon bits
  • ⅓ cup chives, finely chopped

Directions 

Begin by preheating your oven to 425F. Take a large glass baking dish or line a baking sheet with parchment paper. Using a fork, poke holes into your potatoes. This will allow the heat to escape and give your potatoes that fluffy texture you’re looking for. Place the potatoes in the baking dish or sheet. Rub them with olive oil and sprinkle with salt.   • 5 pounds of russet potatoes 
  • 2 garlic cloves, minced

Directions 

Cut your potatoes, leaving the skin on is optional if you want to add some extra texture. Make sure you are cutting your potatoes to evenly sized chunks, about an inch thick. Take a large pot and fill it with cold water. Transfer over your potato chunks into the pot. Next, stir in your garlic and salt. Turn on the heat and wait until your potatoes come to a rolling boil. Then reduce to medium high heat. Continue cooking for 10 to 12 minutes, or until soft. Drain the water. Heat your butter, milk and salt in a small saucepan on low heat. We just want to melt our ingredients here, not burn them. A microwave works great for this step too. After draining the water, return your potatoes to the pot and reduce the heat to low. We are just trying to cook the remaining moisture out of them. When most of the moisture has evaporated take your potatoes off the heat and set to the side. Next, mash your potatoes while adding in your butter mixture. Fold in cheese, milk and toppings of your choice. Sever and enjoy.

  • 2 russet potatoes, peeled 
  • 3 tbsp butter
  • 1 pinch salt
