When you’re allergic to the number one food additive, it feels like you can have nothing delicious. And you find yourself stuck in a ruthless cycle of dry bread free bread and soggy rice pasta. But fear no more! Here are 5 gluten free recipes that are a must try for any food lover.

This recipe is perfect for any weekday dinner.

1. Enchiladas With Red Sauce

This recipe is perfect for when you’re looking for a quick weekday dinner and want all the leftovers. I personally love this recipe because you can add your favorite ingredients to make it totally customizable to what you want out of your enchiladas. Make your weekday meals easy, with this recipe. 

Ingredients

  • 1 can red enchilada sauce
  • 6 corn tortillas
  • 1 ½ cups Mexican cheese blend
  • Ingredients of your choice for fillings
  • ½ white onion, chopped

Directions

Begin by heating your tortillas over medium high heat in a small dry pan. While you’re heating your tortillas, preheat your oven to 350 F. Prepare a baking dish. Take your warmed tortillas and lightly roll with your filling of your choice with your cheese blend. Place seam down in the baking dish and repeat the process. Lightly pour your enchiladas sauce over your rolled cheese tortillas. Sprinkle with an additional layer of cheese. Bake for 10 minutes. Remove from heat, plate and sprinkle your onions on top. Serve and enjoy.

2. Bacon Blue Cheese Brussel Sprouts

This recipe is a great way to up your veggies when you’re looking for a fast, delicious and gluten free way to liven up your next dinner. Take your veggie game to the next level with this fantastic recipe. 

Ingredients

  • ¼ cup vegetable oil or avocado oil
  • 3 cups brussel sprouts, halved
  • ½ cup red onion, sliced
  • ½ cup red pepper, sliced
  • 2 tbsp balsamic vinegar
  • 1 large pinch salt
  • 1 pinch pepper
  • 1 garlic clove, minced
  • ½ cup blue cheese, crumbled

Directions

Take a large skillet and heat oil over medium high heat. Add in your brussel sprouts, red pepper, onions, and cook until tender. This should take around 10 minutes. Remove from the heat and add in your cheese, salt and pepper. Serve and enjoy.

Ingredients

  • 1 package of rice noodles
  • 3 tbsp oil
  • 3 cloves of garlic, minced
  • 8 ounces of uncooked chicken
  • 2 eggs
  • 1 red bell pepper,sliced
  • 2 eggs
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • ½ cup peanuts, dry roasted
  • ½ cup cilantro
  • 2 limes

Sauce

  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 5 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 dash hot sauce
  • 2 tbsp peanut butter, creamy

Directions

Cook your noodles according to the directions on the package. Rinse under cold water. Mix the ingredients of the sauce together in a small bowl and set to the side. Heat a medium skillet up with your oil over medium high heat. Add in your chicken, garlic and bell pepper. Let cook for 3 to 4 minutes. Push the contents of the pan to the side and add a little oil before adding your beaten eggs. Scramble. Next, add in your noodles, sauce, bean sprouts, peanuts and peanut butter. Top with your garnishes. Serve and enjoy.

4. Tuna Salad With Tarragon

  • 2 cans of tuna, drained
  • 1 cup chopped celery
  • ¼ cup red onion, chopped
  • ⅓ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp tarragon
  • ½ tsp Dijon mustard

  • 1 pinch salt
  • Serve on lettuce leaves

Directions

Ingredients

  • 5 lbs of potatoes, peeled and cubed
  • 1 package of cream cheese, softened
  • 1 cup of sour cream
  • 3 tbsp butter
  • 1 pinch salt
  • 1 pinch onion salt
  • 1 pinch pepper

Directions

Begin by placing your potatoes in a skillet and cover with cold water. Cover and bring to a rolling boil and let cook for 20 to 25 minutes or until soft. Drain well. In a large bowl proceed to mash your potatoes. Add your sour cream, cream cheese, butter, onion salt, salt and pepper. Beat until lightly and fluffy. Preheat your oven to 350 F. Dot with butter and transfer your mashed potatoes to a baking dish. Cook through for 20 to 25 minutes. Serve and enjoy.
