1. Egg Salad Sandwich

This classic is great for when you’re feeling like some cool and refreshing comfort food. Egg salad is full of protein and the soft sweet kick of vinegar. The onions and soft crunch pickles make this recipe a must try for your next sandwich occasion. 

Ingredients

  • Sourdough bread, cut into small squares
  • 4 hard boiled eggs
  • ½ cup mayonnaise
  • 1 dash white vinegar
  • ⅓ red onion, finely chopped
  • 4 pickles, finely chopped
  • 1 pinch salt
  • 1 pinch pepper

Directions

Begin by hard boiling your eggs. Taking a small pot over medium high heat, bring your water to a rolling boil. Once thoroughly bubbling, add in your eggs. Reduce the heat to medium low and let cook for 15 minutes. Remove from heat and drain carefully, adding cold water over the eggs. Once they are cool enough to handle, carefully peel your hard boiled eggs. Next, in a medium mixing bowl, take your hard boiled eggs, mayonnaise, white vinegar, red onion, pickles, salt and pepper. Combine and mix together until thick. Gently spread your slices of sourdough bread. Serve and enjoy.

Ingredients

  • 16 slices of white sandwich bread, crusts removed
  • 1 cucumber
  • ¼ cup mayonnaise
  • 8 ounces cream softened, softened
  • 1 tbsp dill, minced
  • 1 tbsp chives, minced
  • 1 tbsp lemon juice
  • 1 pinch garlic powder
  • 1 pinch salt
  • 1 pinch pepper

Directions

Start by peeling your cucumber into strips. About ⅛ inch thin slices. Place your slices on a paper towel and lightly season with your salt. Wait 15 to 30 minutes before patting dry with a paper towel. Next, in a medium bowl, mix your cream cheese, mayonnaise, chives, lemon juice, dill, garlic powder and salt. Spread on one each slice of bread. Lightly layer your cucumber slices over the halves of the bread slices. Season with your black pepper. Using a sharp knife, cut each sandwich into quarters. Serve and enjoy.

  • 2 tbsp butter, melted

Directions

Begin by preheating your oven to 350F. Slice your bread into thick diagonal slices. Place your sliced bread on a large baking pan or dish. Lightly brush the surface with butter. Be sure to get both sides of the bread to get that even golden coating. Bake for 5 minutes until the edges of bread become gold. In a small mixing bowl, combine your cream cheese, mayonnaise, garlic and dill. Mash together with a fork. Spread the cream cheese over the bread. Top with a slice of salmon. Serve and enjoy.
