1. Pasta In Pink Sauce

Do you have a starch loving picky eater who hates onions? This recipe is a must try for you. This recipe of pink sauce has that perfect sense of richness coupled with the starch of pasta, making it a perfect blend of fresh and decadent. Work around that picky eater in your life with this recipe. 

Ingredients

  • 1 pound of bucatini pasta
  • 2 tbsp olive oil
  • 1 can crushed tomatoes
  • 3 garlic cloves, peeled and minced
  • 2 tsp sugar
  • 2 tsp salt
  • ½ cup raw cashews
  • ½ cup water
  • ½ cup basil, chopped

Directions

Take a large pot, fill it with water and salt it. Turn the stove on to medium high heat and bring your water to a rolling boil. Next, add in your pasta and cook according to the directions on the package. Drain and return to the pot. In a saucepan, over medium heat, add in your oil and garlic. Let it cook for 1 minute before adding in your tomatoes, sugar and salt. Reduce the heat to medium low and cook for 10 minutes. Be sure to stir occasionally. While that is reducing, take your cashews and combine them to water before adding them to a blender. Process on high for about 2 minutes until smooth. This should take around 2 minutes. Mix in your cashew cream to the tomato sauce and turn off the heat. Add in your basil and lightly toss in with your pasta. Serve and enjoy.

2. Jalapeno And Chorizo Taquitos With Avocado Sauce

Have an onion free eater but are not feeling Italian food for dinner? No problem! This recipe is perfect for those picky eaters while also being a great tasting snack for you! The sweet smokey zing of the jalapenos coupled with the heat of the chorizo makes for a perfect snack. If you’re looking to spice up your picky eater’s life, try this recipe out. 

Ingredients

Jalapeno Popper Taquitos 

  • 6 jalapeno peppers, stemmed, seeded and diced
  • 1 pound of chorizo, casings removed
  • 30 corn tortillas
  • 1 package of cream cheese
  • Oil for frying
  • 3 cups cheddar, shredded

For The Creamy Avocado Sauce

  • 1 large avocado
  • ⅓ cup sour cream
  • ⅓ cup cilantro
  • Juice of 2 limes
  • 1 pinch salt
  • 1 pinch pepper

Garnish 

  • Sliced jalapeno
  • Crumbled cotija cheese
  • Cilantro, chopped

Directions

Take a large skillet over medium high heat and cook down your chroizo. Add in your jalapenos and reduce until thoroughly cooked through, be sure to break up your chorizo with your spatula. Transfer the chorizo mixture to a large bowl and add in your cream cheese and cheddar. Mix well. Next, heat up oil over medium high heat in a medium pan. Place a tbsp of chorizo mixture down the line of a corn tortilla. Roll it up tight and place seam down. Cook the seam first to ensure it stays closed. Fry your taquitos until they are all golden on all sides. Transfer to a paper towel lined plate. Repeat the process until you have made all your taquitos. Combine your avocado, sour cream, cilantro and lime juice in a blender. Blend into smooth and creamy. Drizzle your sauce over the top. Garnish. Serve and enjoy.

3. Mashed Potatoes

Do you have a picky eater who only craves the sweet starch of mashed potatoes but no garlic? This recipe is perfect for satisfying the cravings of your picky eater while also making great tasting mashed potatoes. This recipe is a happy medium for all for your next dinner. 

Ingredients

  • 2 pounds of russet potatoes,
  • 1 pinch salt
  • 1 cup milk or cream
  • 4 tbsp butter, unsalted
  • 1 small pinch pepper
  • 1 small pinch nutmeg

Directions

Peel and cut your potatoes into thick slices. Place in a medium saucepan and cover with cold water and salt. Bring to a rolling simmer. Let cook until they are soft. Drain and set to the side. In a medium saucepan over medium high heat, add your milk. Take your blender and add your potatoes, butter hot milk, pepper, salt and nutmeg. Mix on low until thoroughly combined. Let cool. Serve and enjoy.

4. Rice Pulihora

This recipe is perfect for those picky eaters who are looking for something a little healthier out there but still shy away from the sharp taste of onions. This recipe is a rich, flavorful and colorful  way to add that life back into your dinner. 

Ingredients

  • 1 cup rice
  • 1 pinch salt
  • 1 tbsp tamarind pulp
  • 5 tbsp canola oil
  • 1 tbsp mustard seeds
  • 1 tsp cumin
  • 2 tbsp chickpeas, cooked
  • ½ cup cashews
  • 2 small pinches turmeric
  • 5 green chilies, stemmed and seeded
  • 5 red chilies, stemmed and seeded

Directions

Take a small pot and bring 2 cups of water to a rolling boil over medium high heat. Add in your turmeric and oil. Add in your rice and cook according to the directions on the package. Remove from heat and set to the side. Heat up your oil in the pot and add in your rice. Season with salt and pepper. And in your turmeric and fry the pulp until it oozes out the oil. Add your turmeric pulp to the rice and mix thoroughly. This should make it turn a beautiful bright yellow color. Garnish. Serve and enjoy.

5. Cauliflower Rice Tabbouleh

This recipe is great for those who are looking for a little texture in their life but shy away from meat. This recipe is perfect for both vegetarians and picky eaters alike. And the best part, this recipe is fast, easy and beautiful to create. 

Ingredients

  • ½ head of cauliflower, riced
  • ½ cucumber, diced
  • 8 punches of cherry tomatoes, quartered
  • 4 green onions, sliced
  • 2 cups parsley, chopped
  • ⅓ cup mint leaves, chopped
  • 2 lemons, zest and juiced
  • 1 dash olive oil
  • 1 pinch salt
  • 1 pinch pepper

Directions

Thoroughly combine all the ingredients above. Plate. Serve and enjoy.
