While casseroles might seem a little outdated and retro, they are absolutely delicious. Casseroles are perfect for those cold winter nights when you’re looking for a little warmth and comfort. And while casseroles have been around for decades, being spotlighted in the 1950’s, they are a must try for any comfort cooking. These recipes will help you update the old casseroles while making them still taste like your mom used to make. Here are 5 casseroles to warm your soul.

Green bean casseroles are great for any comfort food craving.

1. Green Bean Casserole

This creamy delight is great for any cold night craving. Green bean casserole is a classic that is both soothing and delightful. I personally love the combination of the mushroom creamy texture with the soft crunch of the green beans. To top it off, french onions add that perfect extra crunch to your next family dinner.  If you’re looking for something warm and rustic this cold season, this recipe will not disappoint. 

Ingredients

  • 1 can condensed mushroom soup
  • ½ cup milk
  • 1 splash soy sauce
  • 4 cups green beans, cooked
  • 1 ⅓ french fried onions

Directions

Preheat your oven to 350F. Stir the soup, milk, soy sauce and green beans in a baking dish. Season with salt and pepper. Sprinkle your french onions on top and bake for 25 minutes. Remove and sprinkle remaining onions on top and bake for 5 minutes until golden brown. Serve and enjoy your delicious creamy casserole.

2. Squash Casserole

If you’re looking for something that reminds you of the holidays and gives that sweet taste of squash, this recipe is perfect for you. This recipe has been a personal family tradition for years and is great for when you’re craving that sense of sweetness in your life. This is a rich and beautiful casserole that will feed you well for days and keep you warm. 

Ingredients

  • 6 tbsp butter
  • 3 pounds yellow squash, sliced
  • 1 onion, chopped
  • 2 pinches of salt
  • 2 eggs, beaten
  • 1 container of sour cream
  • 4 ounces of sharp cheddar,shredded
  • 2 ounces Swiss Cheese,shredded
  • 1 ounce parmesan cheese, shredded
  • ½ cup mayonnaise
  • 2 pinches of thyme
  • 1 pinch black pepper
  • 2 sleeves of Ritz crackers

Directions

Preheat your oven to 350F. Melt your butter in a large skillet over medium high heat. Add your squash, onion and salt. Cook until tender for about 10 minutes. Transfer mixture over to a bowl and drain out the liquid. Next, stir together your eggs, sour cream, cheddar, swiss, mayo, thyme and pepper in a large bowl. Gently fold in your squash. Melt the remaining butter separately and toss in crackers and parmesan along with the melted butter. Place in a baking dish and bake for 20 minutes. Serve and enjoy.

3. Tuna Casserole

This classic is great for any get together. I personally make this when I’m feeling especially home sick. This casserole is a tasty family tradition that leaves you with plenty of delicious leftovers. This recipe will show you how to make it just like your grandmother used to make with an updated twist. Let’s get started! 

 

Ingredients

  • 1 can condensed cream and mushroom soup
  • ½ cup milk
  • 1 cup frozen peas
  • 2 cans tuna, drained
  • 2 cups cooked egg noodles
  • 2 tbsp dried bread crumbs
  • 1 tbsp of butter, melted

Directions

Preheat your oven to 400F. Stir your soup, milk, peas, tuna and noodles. Season with salt and pepper. Add butter and breadcrumbs. Add the mixture to a baking dish and bake for 20 minutes. Next, add additional bread crumbs and bake for an additional 5 minutes. Serve and enjoy. 

This casserole is perfect to satisfy any cheesy chicken craving.

4. Cheesy Chicken Casserole

This classic is great when you’re craving that fatty cheese chicken combo. This recipe is perfect for cold nights and lots of leftovers. Cheesy chicken casserole is a fast and easy way to satisfy any chicken cheesy craving. And the best part, it’s simple!

Ingredients

  • 3 cups shell noodles
  • 3 tbsp of butter
  • ⅓ cup bell pepper
  • 1 onion
  • 1 pinch salt
  • 1 pinch chili powder
  • I can cream of chicken soup,condensed
  • 1 ⅓ milk
  • 3 cups sharp cheddar, shredded
  • 4 ounces mild green chilies
  • 3 cups chicken, cooked

Directions

Preheat your oven to 375F. Cook your shell pasta until it is done, following the directions on the package. Cook your onion and bell pepper in butter for about 5 minutes. We just want it to get tender. Add in your salt and chili powder. In a mixing bowl, combine soup, milk, onion mixture, cheddar cheese, pasta, green chilies and chicken. Spread in a baking dish and bake for 30 to 35 minutes. Serve and enjoy. 

This recipe is perfect to for lots of great tasting leftovers.

5. Baked Bean Casserole

This casserole is perfect for any party occasion or great for lots of leftovers. Baked beans are a wonderful starchy staple. This casserole adds that richness of pork with the sharp tang of soy, that adds that perfect balance to your next dinner. 

Ingredients

  • Cooking spray
  • 1 onion,chopped
  • 2 cans of pork
  • 1 bell pepper, chopped
  • ½ cup barbecue sauce
  • ½ cup ketchup
  • 2 tbsp spicy brown mustard
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 4 tbsp brown sugar
  • 6 to 8 slices of back, cooked and chopped

Directions

Preheat your oven to 350F. Spray your baking dish with cooking spray. In a large saucepan over medium high heat, brown your onions and peppers. Add the pork, beans, barbecue sauce, mustard, ketchup, Worcestershire sauce, soy sauce and brown sugar. Simmer for 5 minutes. Transfer the mixture over to a baking dish. Sprinkle your bacon over the top and cover the dish with aluminum foil. Bake for 45 minutes. Remove foil and bake for another 10 minutes. Serve and enjoy. 

Rumor has it this culinary classic is outdated, but it couldn’t be farther from the truth. With these recipes, you can take on a new twist to the traditional style developed in 1950’s cooking.
