  • ¼ cup butter
  • 1 can of pineapple slices, drained and juice reserved

  • Eggs, according to the amount of the directions for cake mix

Directions 

Preheat your oven to 350F. In a cake pan, approximately 13 by 9, butter your pan. Sprinkle your brown sugar at the bottom of your pan. And arrange your pineapple slices on top. Next, arrange your cherries in the middle of the pineapple rings and throughout the brown sugar. You’re going to want to press gently into the brown sugar to ensure that they stick. Next, make your cake batter as directed, using your reserved pineapple juice instead of water that was directed on the cake mix box. Pour your batter over the pan of brown sugar, cherries and pineapple. Bake for 42 to 48 minutes. Once you remove from the oven, immediately run a knife over the edges of the baking dish. Set up a heat proof plate and carefully flip the pineapple upside down cake over so it gently plops onto the plate and out of the baking dish. Let sit for 30 minutes. Serve and enjoy.

In another large mixing bowl, whisk your oil, buttermilk, eggs, food dye, vanilla and vinegar. Using a mixer, add your dry ingredients to the wet and combine until it is a smooth batter. Evenly distribute your batter into the cake pan. Bake and rotate halfway through the baking process. Cook for about 30 minutes or until batter is cooked through. Remove the cake from the oven and run a knife along the edges of the baking pan. Carefully flip onto an oven safe plate and let cool before decorating with your cream cheese icing and crushed pecans.
