1. Chorizo Burrito

This spicy friend is a great way to start off your day with a bang! Chorizo burritos, while typically categorized as a breakfast burrito, are great for any time of day. Unlike other burrito recipes, this hot beauty is packed with protein and veggies that will leave your body healthy and leave you wanting more. 

Ingredients

  • Cooking spray
  • `½ cup red onion, chopped
  • 1 green chile pepper, diced ( note, you can leave the seeds in if you want that extra kick)
  • ¾ pound chorizo, casing removed and crumbled
  • 4 eggs
  • 4 flour tortillas
  • 1 cup cheddar cheese, shredded

Directions

Coat a large pan with your cooking spray and proceed to add in your chorizo. Cook over medium high heat until brown and crumbling. Next, add in your onion and chili pepper and cook until tender. Then, beat your eggs in a separate bowl and add to your chorizo mixture. Make sure to reduce the heat to medium low while continuously folding in eggs until scrambled. Next, warm up your flour tortillas in the microwave or on a stovetop. Spoon the mixture into a straight line down the middle of your tortilla, roll up. Serve and enjoy.

2. Carne Asada Burrito

This recipe is the ultimate combo of juicy meat and crispy veggies. If you’re looking for that sweet bite of beef with some sour cream to cut through, this burrito is a must try. This personal favorite has very easy prep work and is great for on the go meals. If you’re pressed for time but don’t want to compromise flavor, this recipe is a must try. 

Ingredients

  • 1 serving carne asada,cooked
  • 6 flour tortillas
  • 2 tbsp pico de gallo ( if you’re craving that extra kick)
  • 6 ounces of jack cheese, shredded
  • 2 avocados
  • 1 dollop sour cream
  • 1 dash hot sauce( I found Cholula works best for this recipe)
  • 2 ½ cups referred beans

Directions

Prepare your carne asada according to the directions. In a dry pan, warm your tortillas for 30 seconds on high heat. Flipping on both sides. This should take no more than 30 seconds on each side. Transfer to a plate and set to the side. Warm your refried beans in a dry pot on medium heat. Watch these carefully as you do not want to burn them! Stir continuously. To assemble your carne asada burrito, spread your refried beans on the bottom of the tortilla, add in your carne asada, cheese, avocado, pico de gallo, sour cream and hot sauce. Fold securely. Serve and enjoy.

3. Buffalo Chicken Burrito Recipe

If you’re craving that extra kick to your snacking regiment but are not in the mood for Mexican style burrito recipes, this burrito is perfect for you. The beloved and renowned flavor of hot wings is the perfect marriage of smokiness and spice. The hot kick of the buffalo sauce, relieved by the cool crunch of carrots, celery and fluffy flour tortilla. When you’re looking for the perfect balance of spice and refreshing, try this recipe out. 

Ingredients

  • 3 tbsp of butter
  • 1 large dollop cayenne pepper sauce
  • 1 clove of garlic, minced
  • 2/12 cups shredded chicken, cooked through
  • 1 avocado, diced
  • ¼ cup celery, diced
  • ¼ cup carrot, grated
  • 2 tbsp blue cheese ( ranch dressing also works great)
  • 3 cups white rice, cooked and warm
  • 4 flour tortillas, warmed
  • 6 ounces of blue cheese ( or feta if you don’t want that strong bite)
  • 2 ounces queso fresco, crumbled.

Directions

Begin by melting your butter in a large skillet over medium low heat. Add in your garlic and cook for 2 minutes. Add in your cayenne pepper sauce and bring to a rolling simmer. Next, add your chicken, stirring gently until sauce and butter have reduced and absorbed into it. This should take around 7 minutes. In a separate bowl, combine your avocado, celery and carrot. Note, you can also add some green onion if you’re craving a little extra kick. Build your burrito by spooning in your rice, layering your chicken, followed by your avocado mixture. Roll up securely. Serve and enjoy.

  • 10 rice paper wrappers
  • 2 cups of rice, cooked
  • 2 cups pulled pork carnitas, cooked
  • 2 cups of lettuce, shredded
  • 1 can of black beans
  • `1 cup of thick chunky salsa ( optional)

Directions

Begin by draining your black beans, and if you so choose, toss it in with your salsa. Add to a food processor blender and blend until it is a smooth dipping sauce. Fill a shallow bowl with warm water. Next, dip your rice paper into the water as quickly as you can. This will allow for it to stick onto itself but not get soggy. Place wrapper on your rolling surface and add your ingredients. I recommend putting down the lettuce first so the rolls turn out bright green and beautiful. Warp your ingredients in the roll. Repeat the process. Serve and enjoy.

  • 18 rice paper rolls
  • 8 ounces of brown rice noodles
  • 5 ounces of mixed baby greens
  • 1 avocado
  • 1 cucumber, chopped
  • 2 bell peppers
  • 2 cups of carrots, grated
  • 16 ounces of firm tofu
  • 2 cups of purple cabbage, shredded
  • 1 dollop salad dressing or dipping sauce of your choice

Directions

Prepare your rice noodles according to the instructions on the package and drain. Prepare your tofu as described on the package and cut into strips. Add your veggies into a large bowl and toss in the sauce of your choice. Note, if you’re looking for a little less dressing, you can also add it to the side as a dipping sauce if you’re not looking for that full coated flavor. Dip your rice paper into warm water and begin adding your ingredients of veggies, tofu and rice noodles. Roll and stick together. Serve and enjoy.
