Being stuck at home during this 2020 quarantine means crazy sleep schedules with all this free time we have. I mean, I sleep most of the day and am up most of the night because I don’t have a set schedule anymore, which means, I get the midnight munchies a lot and am always looking for a yummy snack. I never really know what to make and just stand in my kitchen staring at the contents of my fridge for about twenty minutes. If you are experiencing the same disappointing problem during the night, I might have some solutions for you!
Here are fifteen of the yummiest snacks you can make during the long hours of the night. There are some that are on the healthier end and there are some that are just so yummy it doesn’t matter whether they are healthy or not. I have provided ingredients and instructions on how to make some of them while others you can find at your grocery store. Enjoy!
If you like any kind of potato, and I mean any kind, you’ll love these sweet potato chips. They are a super yummy and healthy alternative to regular potato chips and they are super easy to make. If you make a huge batch, you can save them to munch on for the next week!

Preheat the oven to 400F and line a baking sheet with parchment paper. You can either peel or not peel the potatoes, then thinly slice the potato. Put the potato slices in a bowl and drizzle the olive oil over them. Add however much salt or garlic salt and any other seasoning you’d like to the bowl and mix together. Arrange the potato slices on the baking sheet. Bake them for about 10 minutes. Then, turn over each slice and bake for another 2-3 minutes.
Alright, another potato recipe. Just by the way, my favorite food is potatoes. They come in all shapes and sizes and forms and they taste so good in any way they come! Here is another favorite, sriracha fries!! Fries is the yummy snack that I crave every night. Here’s how to make them:

Preheat your oven to 375F and grease a large baking sheet. Cut your potatoes into thin strips or wedges. Place your potato strips or wedges into a ziplock back. In a small bowl, mix together oil, sriracha sauce, and seasonings and then pour the mixture into the ziplock bag. Seal and shake the bag until all potatoes are covered. Then arrange potatoes on the baking sheet and bake for 20-25 minutes. Add some more sriracha sauce if you like them extra spicy!
Street tacos are a classic meal, and yes they are a little surprising for the midnight munchies, but they are literally delicious at any time of the day. And I would argue for breakfast as well! The ingredients list is a little long, but they are super easy to make.

In a small bowl, whisk together garlic powder, onion powder, paprika, cayenne, and salt until combined and then season the chicken thighs. In a skillet, heat up olive oil on medium heat and then saute the chicken until cooked through and is a little brown. This should take about 8 minutes. Remove off heat and let cool for 10 minutes. Then, cut the chicken into bite-sized pieces and save for later.
In another bowl, mix together onion, cilantro, jalapeno, lime juice, and salt; this is your topping. In another skillet or griddle over medium heat, layer two corn tortillas on top of each other and warm tortillas on both sides. Do this with the desired amount of tortillas. Assemble the tacos and add whatever other toppings you would like, and you got yourself some yummy street tacos!
This snack is probably the healthiest one on this list. When you are looking for something sweet but not too fattening, this is the go-to snack. Super easy and does not create too much of a mess in the kitchen. It is pretty explanatory on how to make this snack. All you need is a spoon to smother the apple in peanut butter.

Add the chocolate chips and microwave for 70-90 seconds until cake is just set but with the top just slightly shiny still. Let the mug sit for a minute before eating as it will be hot.
Edamame is so yummy and actually a really healthy snack too. I know some people do not like edamame, but I think it works as a great midnight snack as it is a great source of protein. In a skillet, heat olive oil over medium heat. I usually cook the bell peppers a bit longer so they soften up a bit, but you can cook the chicken first. Season chicken with salt, pepper, and garlic powder then add to the skillet with the onion and bell pepper. After all is cooked, set aside.
