10 Egg Dishes You’ll Want To Cook Immediately

Easily accessible, incredibly affordable, and healthy to boot, eggs are a food that often doesn’t get much recognition outside of the breakfast table. One may not usually put too much thought into how we use eggs in recipes, and how they can be the star of the meal. One thing is for certain, though—if you love eggs, you’re going to love these egg dishes.  

1. Scrambled Eggs

Of all the egg dishes there are, this is probably the first one that comes to mind. Simple, flavorful, and one of the best breakfast foods of all, scrambled eggs are easy to make and incredibly versatile. They go well with almost any breakfast food, and the mix-ins are only limited by your palate and groceries. Try chives and cheese, fried spam and sriracha sauce, or salsa for an interesting twist on this classic.

2. Shirred Eggs

This egg dish might sound fancy, but it’s really just eggs baked in ramekins. However, you can make these eggs as fancy as you want! Try lining the ramekin with Canadian bacon, or sprinkle cheese and veggies on top of your eggs. Or you can whisk your eggs together, or crack them right into the ramekins and bake them so the yolks don’t break. No matter what, you can count on a cute little presentation when you pull your adorable egg cups out of the oven.

3. Shakshuka

The word itself translates to “mixture,” and what a mouth-watering mixture it is! Fire-roasted tomatoes, garlic, and chili peppers are combined with warm spices like cumin, paprika, and pepper to create a beautiful sauce. Once the sauce is made, about six eggs are cracked into the sauce to be poached. Top with feta and cilantro, and serve with warm, crusty bread. This egg dish is meant to be served as a breakfast food, but will satisfy hunger at any time of day!

4. Egg Drop Soup

No need to go to your local Chinese restaurant when you can make this eggy soup at home! The two main ingredients of this egg dish are eggs and chicken broth, so this is already a great recipe to make when you’re on a budget and low on ingredients. Simply season your chicken broth to your liking, and quickly whisk in eggs to the heated mixture to create the signature ribbon look that all good egg drop soup has. Top off your soup with green onion, or add a bit of tofu if you’re looking to bulk up your soup. 

5. Huevos Rancheros

You’ll feel like a real rancher when you take a bite into this savory, flavor-packed egg dish. Eggs are fried sunny side up, and served atop a bed of refried beans and salsa. This dish is generally served with warm tortillas, rice, and topped with additional tidbits such as cheese, onions, guacamole, and cilantro. Though considered a breakfast food, this egg dish is great for any meal. 

6. Souffle

This delicate egg dish is known for its signature puff. The raised top comes from stiff beaten egg whites folded lightly into the souffle batter. The great thing about this egg dish is that it can go two different ways, depending on your taste preference. If you are more of a savory person, you can make a cheese souffle, or even a seafood souffle. If you have more of a sweet tooth, consider baking a classic chocolate souffle, or spice things up with a Grand Marnier flavored souffle. Or have the best of both worlds, and make one of each!

7. Carbonara

What is it about egg dishes that so many have so few, and simple ingredients? Carbonara consists of four main ingredients: pasta, eggs, pork, and cheese. Four ingredients to make one creamy, delectable dish that is simple to cook. Eggs and starchy pasta water are combined to create a silky, rich sauce that pairs wonderfully with crispy pork and salty, savory cheese. Add a bit of diced tomato or ribbons of basil to add acidity and brightness to this egg dish.

8. Frittata

Roughly translating to “fried,” this Italian egg dish is a lot like a crustless quiche. Eggs are beaten and poured into a deep cast iron or oven-safe skillet, and cooked on a stovetop or in an oven. Frittatas are the perfect way to use up a lot of leftover produce and groceries before making your next shopping excursion. Do you have some salad greens, but not enough to make a salad? Only a splash of milk left in the carton? Are your tomatoes still edible, but not as firm as you’d like them to be? Throw them in the frittata! 

9. Parisian Flan

Custard and caramel create the jiggly,  sweet dessert we know and love—flan. While the flan many of us think of has a top layer of caramel, Parisian flan is slightly different. Parisian flan is more of a custard pie. Instead of a top layer of caramel, however, Parisian flan is put under a broiler once it is done baking to add a caramelized crust to the top of the custard. Parisian flan is extremely reminiscent of creme Brule, without the hard crust. This is one egg dish definitely worth trying!

10. Egg Salad

Ahh, egg salad. This egg dish may bring back memories of school lunches, grandma’s house, or road trips that had your family hell-bent on making sure everyone arrived on time with minimal stops. There is something so homey and humbling about egg salad. Chopped, hard-boiled eggs mixed with mayonnaise, onion, celery, pickle, salt, pepper, and a bit of paprika. Maybe a squeeze of mustard or dash of vinegar if you’d like. Whatever your preference, this egg dish is one that will remain close to many of us in our memories and our stomachs.
