10 Delicious & Healthy Instant Pot Recipes

Instant Pots, well any pressure cooker out there, are super helpful in whipping up delicious meals with ease! These delicious Instant Pot recipes are a great combination of healthy and tasty and will give you some great meals and great leftovers! Many of these recipes can be kept in the fridge afterward, making them great options for meal-prepping. Here are 10 delicious & healthy instant pot recipes you should try as soon as possible!

1. Cherry-Almond Oatmeal

This Instant Pot recipe is a great breakfast recipe that gives you delicious oatmeal in about 20 minutes. The ingredients include vanilla almond milk, steel-cut oats (of course), dried cherries, packed brown sugar, salt, and ground cinnamon! Just put all the ingredients together into your Instant Pot and let it pressure-cook on high for five minutes! Let it stand for about 10 minutes and the oatmeal will thicken during that standing period. Enjoy a delicious and healthy breakfast with little effort from this Instant Pot recipe!

2. Buffalo Chicken & Sweet Potatoes

Here’s an Instant Pot recipe that only uses about eight ingredients but ends up looking and tasting like it was from a restaurant. You’ll use chicken breast, an onion, butter, buffalo sauce, sweet potatoes, onion powder, garlic powder, and salt & pepper to taste. You’ll first “saute” the onion in your Instant Pot and once it’s browned you’ll add the remaining ingredients including your chicken and sweet potatoes into the pot. Use your “Poultry” feature unless you have frozen chicken then you’ll need to do 30 minutes at the high-pressure “manual” setting. This instant pot recipe gives you a great combination of good protein from your chicken and fiber, vitamins, and minerals from your sweet potatoes!

3. Beef with Broccoli

Some instant pot recipes, such as this one, require a bit more prep but the greatness of the pressure cooker is that it takes under 10 minutes to cook! First, you’ll need to tenderize and slice your flank steak trying to get as thin of slices as possible. Then you’ll make your beef and broccoli sauce using soy sauce, hoisin sauce, minced garlic, red chili sauce, and cornstarch. Give your beef a quick sear using the Instant Pot’s saute function and then pour in your sauce and seal your Instant Pot and cook for eight minutes no high. Finally, the special part of this recipe is getting perfectly cooked broccoli. After those eight minutes, open up your Instant Pot (safely by releasing pressure first, of course) and add in your broccoli. Close and seal the Instant Pot and cook on high for zero minutes. This will make the Instant Pot get to high pressure then be done cooking! Any longer and you’d likely have mushy broccoli.

4. Indian-style Chicken & Vegetables

Instant pot recipes are amazing because they produce some awesome food in such little time! This recipe makes Indian-style chicken & vegetables in just about 20 minutes. It’s a super easy instant pot recipe that simply involves combining all the ingredients into your pressure cooker and cooking it for about 5 minutes! It’s got a good mix of healthy ingredients to give you a well-rounded Indian-style meal.

5. Black Bean Soup

Instant Pot recipes can have a wide variety of ingredients and flavors to make almost any type of meal! This recipe makes a delicious black bean soup using 10 ingredients, a blender, and of course your Instant Pot. You’ll begin with cooking your corn until it’s golden brown, then add your beans, broth, onion, red pepper, garlic, and cumin to your Instant Pot. Cook on high pressure for 5 minutes, then let the pressure release naturally for 10 minutes, quick-release any pressure that remains after that. Finally, puree your soup using a blender and return to the pressure cooker to heat through! Sprinkle some pepper on and garnish with any extra corn and the cilantro.

6. Chickpea & Potato Curry

Here’s a delicious curry recipe that utilizes both the taste and many health benefits of chickpeas! Chickpeas are a great source of vitamins and minerals as well as high in protein. Instant pot recipes such as this are great because they can be easily altered to fit distinct tastes and preferences. If you prefer chicken or another protein source then that could be swapped for the chickpeas you’ll just need to adjust cook times; the great thing about Instant Pot recipes is the super-fast cook times!

7. Spicy Beef Vegetable Stew

This is another one of the quick and easy Instant Pot recipes that are both healthy and delicious! This recipe makes a spicy beef vegetable stew perfect for lunch or dinner. You’ll need lean ground beef, meatless pasta sauce, frozen mixed vegetables, diced tomatoes and green chiles (undrained), chopped onion, celery, beef bouillon granules, and pepper. Lean beef gives you a good source of protein without too much fat and the mix of vegetables makes this a well-rounded meal. Some Instant Pot recipes such as this one take a bit longer because you’re cooking and marinating delicious flavors into some meat!
